My honey has crystallised. Is it still good?
Yes — and this is exactly what raw honey is supposed to do. Crystallisation is proof of rawness. It means the honey has not been heated, over-processed, or adulterated. All of our honeys will crystallise naturally over time, at a rate determined by their floral source. To return it to a pourable state, simply rest the jar in a bowl of warm water (not hot) for 15–20 minutes, or hold it in your hands. Do not microwave or boil.
What does “raw honey” mean?
Raw honey is honey that has never been heated above 45°C — the natural temperature inside a beehive. Heating destroys the natural enzymes, antioxidants, and complex aromatics that give honey its character. All Beespoke honeys are gravity-strained rather than pressure-filtered, preserving every trace of pollen, wax, and natural goodness.
What is single-origin honey?
Single-origin means the honey comes from one specific geographical area, harvested in a single season. It is never blended with honey from other regions or other seasons. Each Beespoke honey is traceable to a specific altitude and region in Himachal Pradesh — like a single-vineyard wine or a single-estate tea.
What is The Altitude Standard™?
The Altitude Standard™ is our proprietary grading system. Every Beespoke honey is graded by the altitude at which it was harvested: A700, A2600, A3200, A3300, and A3700. The higher the altitude, the rarer the flora, the shorter the harvest window, and the more complex the honey. Learn more about the grading system.
How should I store my honey?
Store at room temperature, away from direct sunlight. Do not refrigerate — cold temperatures accelerate crystallisation. Keep the lid tightly closed. Stored correctly, raw honey has an indefinite shelf life. It is one of the few foods that does not expire.
Is your honey organic?
Our honey is sourced from areas of Himachal Pradesh where no pesticides, herbicides, or chemical drift are present — the high altitudes and remote valleys where our bees work are naturally free of agricultural chemicals. We are currently pursuing formal organic certification. Our honeys are FSSAI certified and tested for moisture, HMF, purity, and sugar composition.
Why do different jars taste different?
Because they are genuinely different honeys from different altitudes, different flora, and different seasons. The Acacia A2600 is pale and restrained. The Chichri A3200 is almost white and mineral. The Summit Reserve A3700 is dark, dense, and complex. These are not variations of one honey. They are five distinct honeys from five distinct worlds within the same mountain range.

How do I know the Summit Reserve A3700 is genuine?
Each Collector’s Jar of the Summit Reserve is individually numbered. We produce a limited quantity each year from a single micro-harvest. The jar number is your proof of provenance. We will shortly introduce QR codes on every jar linking to batch-specific harvest records, beekeeper details, and testing reports.
