Plectranthus rugosus — known locally as Chichri — grows only in select pockets of Himachal Pradesh's high mountain valleys. Above 3,000 metres, in places where the air is cold and thin and few hands have ever reached, this flowering shrub blooms briefly each year. Our bees, which know these ridges better than any map, gather its nectar in small, precious quantities.
The honey that emerges is pale — almost white, with a faint luminous quality unlike anything produced at lower altitude. On the palate: delicate and mineral, with a clean floral sweetness and a lingering alpine clarity that fades slowly, without weight. It crystallises into a fine, smooth cream — nearly white in colour, and beautiful enough to serve directly from the jar as it is.
We harvest it once a year. The yield is small. Each jar is a record of a single season, a single altitude, a single bloom.
