Our bees harvest here in small batches, moving through a landscape that few humans ever see at the height of bloom. The honey they bring back is deep amber — dense and slow to reveal itself. On the palate: herbal on the opening, floral in the mid-palate, with a long mineral depth in the finish that only extreme altitude can produce. It crystallises into a textured amber-gold mass, rich and full. To restore its pour, rest the jar gently in warm hands. Do not rush it.
Our suggestion: stirred slowly into black tea on a winter afternoon. Or simply from a spoon, eyes closed, somewhere quiet.
