At 2,600 metres in the mountain forests of Himachal Pradesh, Acacia catechu comes into bloom. The flowers are brief, the nectar delicate, and the bees that gather it — unhurried and unbothered — produce a honey of extraordinary restraint.
Exceptionally pale, almost water-clear, with the faintest gold. On the palate: a clean, weightless sweetness with subtle floral grace and a finish that simply fades into quiet — no earthiness, no weight, no afterthought. Our Himalayan Acacia carries a glycemic index of just 32 — one of the lowest of any honey in the world. Not because we altered anything. Simply because nature, at altitude, works differently.
It crystallises very slowly — sometimes remaining liquid for months. This is a quality unique to Acacia, an elegance earned, not engineered. If your jar has crystallised, gently warm it in your hands. It will return.
