Where the Himalayas begin, a thousand wildflowers bloom.
In the foothills of the Shivalik ranges and the lower Dhauladhar — where the plains of India yield to the first great ridges of the Himalayan arc — our bees move freely through a shifting tapestry of native blossom: herbs, shrubs, flowering trees and meadow flowers of these valleys.
The honey that emerges is warm gold. On the palate: an opening of wildflower sweetness that evolves through layers of earthy warmth and gentle floral depth — a Himalayan meadow, held still in a spoon. Like all raw honey, it crystallises: it sets readily into coarse, sandy crystals, turning paler as it does — the most textured of our range. This is not a flaw. It is raw honey behaving as it should, and we welcome it. To loosen it, stand the closed jar in warm water, never above 40°C.
Our suggestion: a generous drizzle on warm paratha at sunrise. The way a father once gave it to his children.
