At 2,600 metres in the mountain forests of Himachal Pradesh, Acacia catechu comes into bloom. The flowers are brief, the nectar delicate, and the bees that gather it — unhurried and unbothered — produce a honey of unusual restraint.
Exceptionally pale, almost water-clear, with the faintest gold. On the palate: a clean, weightless sweetness with subtle floral grace and a finish that simply fades into quiet — no earthiness, no weight, no afterthought.
It crystallises very slowly — sometimes remaining liquid for months. This is characteristic of acacia honey. If your jar has begun to set, rest it gently in warm hands and it will return.
Our suggestion: a single spoon stirred into warm water at dawn. Or taken slowly, alone, before the day begins.
