Pale gold. Almost water-clear. Restraint, at 2,600 metres.
At 2,600 metres in the mountain forests of Himachal Pradesh, Acacia catechu comes into bloom. The flowers are brief, the nectar delicate, and the bees that gather it — unhurried and unbothered — produce a honey of extraordinary restraint.
Exceptionally pale, almost water-clear, with the faintest gold. On the palate: a clean, weightless sweetness with subtle floral grace and a finish that simply fades into quiet — no earthiness, no weight, no afterthought.
Most raw honey crystallises. Acacia is the exception: it is the most fluid honey in our range, and stays clear and flowing long after others have set. This is a quality of Acacia's own nectar, an elegance earned, not engineered. Should a jar ever cloud in the cold, stand it in warm water, never above 40°C. It will return.
Our suggestion: a single spoon stirred into warm water at dawn. Or taken slowly, alone, before the day begins.
