There is a place in the western Himalayas where cold desert valleys — silent, vast, almost lunar — briefly transform. For a few weeks each year, an explosion of alpine blossoms erupts across the high ground at 3,700 metres. The bees that work here are few. The flowers are fierce and fleeting. The yield is extraordinary in its smallness.
This is our rarest honey.
Pale and luminous in the glass — light in colour, with a delicate clarity that belies its depth. On the palate: slow-revealing and profoundly layered. An opening of wild alpine florals, a mid-palate of high-mountain herbs, and a mineral resonance in the finish that stays long after the honey is gone. Unlike anything harvested below 3,500 metres. It crystallises into a fine, pale cream — a singular texture. To pour, rest the jar in warm hands and wait. Some things cannot be hurried.
We produce a limited number of jars each year. Each is a record of one harvest, one altitude, one unrepeatable season.
